Recently, I discovered a way I actually like overnight oats — and it just so happens to be a healthy spin on something I’ve been craving for a while: Mango Sticky Rice!
Overnight oats and I have an interesting relationship. Sometimes I’m into it, other times not so much. Especially the classic “just throw it in a PB jar and call it a day” version — I want to be that girl, but every time I try, I end up regretting it part way through.
But these mango sticky rice overnight oats? A totally different story! I took one bite and immediately ran to my computer like, I need to get this recipe out now. This one’s a keeper — you HAVE to try it for yourself!
Here’s how you make it:
Ingredients:
- 1/2 c Oats
- 1 Tbsp Chia Seeds
- 1/3 c coconut milk + 1/4 c water
- 2-3 dates
- 1/4 tsp vanilla extract
- 1/2 mango, sliced thin
Instructions:
- Add oats + chia seeds to container
- Blend coconut milk, water, dates + vanilla and add to container
- Allow to thicken for about an hour then add sliced mango on top
- Refrigerate overnight + enjoy!
